Anisakiasis is caused by eating raw or undercooked fish that contains the larvae of a type of parasitic roundworm called Anisakis.
How It Happens:
- Fish get infected: Anisakis larvae live in the ocean and infect fish like cod, herring, salmon, and mackerel.
- Humans eat infected fish: When humans eat raw or undercooked fish containing Anisakis larvae, the larvae can enter the human digestive system.
- Larvae try to migrate: The larvae try to migrate to the stomach or intestines, causing an allergic reaction and symptoms.
Symptoms of Anisakiasis:
- Abdominal pain
- Nausea
- Vomiting
- Diarrhea
- Allergic reactions
Prevention:
- Cook fish thoroughly: Always cook fish to an internal temperature of 145°F (63°C) to kill the larvae.
- Freeze fish: Freezing fish at -4°F (-20°C) for at least 24 hours can also kill Anisakis larvae.
- Avoid raw fish: Refrain from eating raw fish dishes like sushi or sashimi.
